Steamed Spare Ribs and Chestnuts in Lotus Leaf


1 tsp oyster sauce

1/2 tsp salt
1 tbsp shaoxing wine
a little sesame oil
1 tsp corn flour
1 tbsp water


  1. Mix spare ribs with seasoning and marinate for 30 minutes.
  2. Combine spare ribs with the remaining ingredients and wrap with lotus leaf.
  3. Steam at high heat for 45-50 minutes until spare ribs are tender. Serve hot.


600g spare ribs, cut into pieces

100g dried chestnuts, soaked
1 pair Chinese sausages, sliced thickly
5 black mushrooms, soaked
5 slices ginger
1 piece dried lotus leaf, soaked and cleaned


This is a very traditional hawker's fair. Spare ribs are marinated earlier for better flavour and kept frozen until needed. You can use chicken to substitute spare ribs and steam for 30 minutes.
