SEASONING
1 tsp oyster sauce
1/2 tsp salt
1 tbsp shaoxing wine
a little sesame oil
1 tsp corn flour
1 tbsp water
METHOD
- Mix spare ribs with seasoning and marinate for 30 minutes.
- Combine spare ribs with the remaining ingredients and wrap with lotus leaf.
- Steam at high heat for 45-50 minutes until spare ribs are tender. Serve hot.
INGREDIENTS
600g spare ribs, cut into pieces
100g dried chestnuts, soaked
1 pair Chinese sausages, sliced thickly
5 black mushrooms, soaked
5 slices ginger
1 piece dried lotus leaf, soaked and cleaned
OTHERS
This is a very traditional hawker's fair. Spare ribs are marinated earlier for better flavour and kept frozen until needed. You can use chicken to substitute spare ribs and steam for 30 minutes.
